Everyone loves waffles, but it holds a special place in Norwegian hearts. Perhaps it’s because they are usually shaped like, well, hearts. Or perhaps it’s the use of soured milk that gives them their unique flavour. Whatever the reason, Norwegian waffles are large, soft, fluffy and delicious.
You can enjoy them with whatever topping you fancy, but if you want to go the truly Norwegian way, we recommend a spread of sour cream and jam, slices of Norwegian brown cheese or use cardamom in the batter, a common spice used in Norway. Caution: you will need a waffle iron!
Ingredients
BUTTERMILK FOR THE WAFFLES
200 ml milk
1 tablespoon lemon
WAFFLES
100g butter at room temperature
250g sugar
250g flour
4 eggs, beaten
100 ml milk
buttermilk, as made above
1/2 teaspoon baking powder
1/2 teaspoon baking soda
¼ teaspoon cardamom (optional)
Directions:
- First, make your buttermilk by putting the tablespoon of lemon juice into a bowl and pouring over the 200ml of milk.
- In a separate mixing bowl, cream together the butter and sugar in a large mixing bowl, then add the beaten eggs to the mixture. Add in your buttermilk and milk.
- Sift together the dry ingredients and mix into the batter to combine.
- Your batter is now ready to pour into your heart-shaped waffle maker and baked according to the manufacture’s manual.
- Serve with topping of choice!
