‘Pancakes?’ you say. ‘Haven’t we all got a recipe for those?’ Not for these babies, you don’t. The reduced amount of flour make these Polish delights lighter and altogether special. Perfect for breakfast on the go.

Ingredients
1 egg
40g flour
½ teaspoon baking powder
Pinch of salt
1 tablespoon vanilla sugar (or more, to taste)
60ml milk (more or less, as needed)
1 apple (thinly sliced and chopped)
Icing sugar, to serve
Directions:
- In a small bowl, whisk the egg then add baking powder, salt, vanilla sugar and flour. Stir until combined.
- Add enough milk to leave mixture the consistency of a creamy ranch dressing. Add sliced apple.
- Pour batter in batches onto a lightly oiled pan. Fry until golden on each side.
- Dust with icing sugar and enjoy!
